At the Big Island Chocolate Festival, the Fairmont Orchid Pastry Team soared to sweet victory, winning Best Plated Dessert in the Judges’ Award category. Executive Sous Chef, Daniel Sampson captivated the judges’ taste buds with a Cold Pressed Kona Coffee Crème Brûlée Flourless Chocolate Cake. The divine pairing of Kona coffee’s rich flavor and velvety texture of the flourless chocolate cake left a lasting impression.

Our culinary team wowed attendees once again with Sous Chef Giacomo Savoia’s, Cacao Crusted Ahi Tataki with Truffle-Cocoa Ponzu and Root Veg Slaw. The delicate balance of the cacao crust enhanced the freshness of the ahi, while the truffle-cocoa ponzu added a decadent twist that delighted the senses. The combination of flavors captivated attendees’ palates and kept them coming back for seconds, and even thirds.

The Fairmont Orchid team, adorned in masquerade masks, won the Best Decorated Booth award. The booth was decorated with flickering candelabras, twinkling fairy lights, feathers, and orchids, creating a scene that matched the enchantment of the evening’s theme.
